  • 1 lb chicken sausage (Italian or smoked), sliced into rounds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sausage rounds and brown them for about 4–5 minutes. Remove from skillet and set aside.
  2. In the same skillet, add diced onion and bell pepper. Sauté for about 3–4 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  3. Sprinkle in smoked paprika and black pepper. Add uncooked rice and toast gently for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce, stirring well before returning the browned sausage to the pan.
  5. Bring to a boil, then cover and simmer on low heat for about 20–22 minutes until rice is tender.
  6. Let it rest off the heat for 5 minutes before fluffing with a fork and garnishing with fresh parsley.
