  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1½ cups long-grain white rice, uncooked
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces, seasoning with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until mostly cooked.
  2. Mix in uncooked rice and Rotel tomatoes; toast for 1–2 minutes.
  3. Pour in chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for about 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese, cover for another 5 minutes until gooey. Serve with optional toppings like cilantro or avocado.
