  • 1 pound boneless chicken thighs
  • 1 onion, diced
  • 2 medium carrots, sliced
  • 24 tablespoons red curry paste
  • 1 tablespoon freshly grated ginger
  • 4 garlic cloves, minced
  • 5 cups low sodium chicken broth
  • 2 (14 oz.) cans quality coconut milk
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar
  • 56 kaffir lime leaves
  • 8 oz. cremini mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1 cup chopped bite-size cauliflower florets
  • 3 oz. rice vermicelli/thin rice noodles/sticks, broken into pieces
  • 1/4 cup chopped cilantro
  • 23 tablespoons fresh lime juice
  • 1 1/2 teaspoons sriracha

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear chicken thighs until golden brown, about 2 minutes per side. Remove and set aside.
  2. In the same pot, sauté diced onion and sliced carrots in the drippings for about 4 minutes. Add red curry paste, grated ginger, and minced garlic; cook for another 2 minutes until fragrant.
  3. Return the chicken to the pot along with chicken broth, coconut milk, soy sauce, brown sugar, kaffir lime leaves, salt, and pepper. Bring to a boil, then reduce heat to medium-low and simmer for 15 minutes until chicken is tender.
  4. Remove the chicken to shred it; add mushrooms, bell pepper, cauliflower florets, and rice noodles to the pot. Cook for about 5 minutes until noodles are nearly al dente.
  5. Stir in shredded chicken along with lime juice and sriracha to taste. Taste and adjust seasoning if necessary before serving.
