  • 1 whole chilled duck
  • ½ teaspoon sea salt (if not brined)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon cracked black pepper
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • ½ cup orange juice
  • 2 tablespoons fig jam
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or coconut amino acids
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon corn starch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the duck dry and rub it with sea salt (if not brined), garlic powder, oregano, thyme, and cracked black pepper. Stuff fresh rosemary and thyme inside.
  3. For the glaze, combine orange juice, fig jam, maple syrup, soy sauce (or coconut amino acids), balsamic vinegar, and corn starch in a saucepan over medium heat. Stir until slightly thickened.
  4. Place the duck on a rack in a roasting pan and roast for about 90 minutes until golden brown. Baste occasionally with its own juices.
  5. Brush the glaze on the duck during the last 15-20 minutes of roasting for a caramelized finish.
  6. Let the duck rest for 10 minutes before carving and serve with any extra glaze.
