  • 1/2 pound turkey sausage
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning, divided
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Chopped fresh parsley (for garnish)
  • Grated Parmesan cheese (for garnish)
  • Sliced green onions (for garnish)

Instructions

  1. Cook pasta in salted water until al dente. Reserve some pasta water before draining.
  2. Toss shrimp and chicken with Cajun seasoning. Sear chicken until golden; remove from skillet.
  3. Cook shrimp in the same skillet until pink; set aside.
  4. Brown turkey sausage in the skillet, then sauté bell peppers and onions until softened.
  5. Make a roux with butter and flour; gradually whisk in broth and cream.
  6. Stir in Parmesan cheese and spices, then return proteins and veggies to combine.
  7. Toss with cooked pasta, adding reserved pasta water if needed for consistency.
