  • 2 lbs red potatoes
  • 1 stick butter (1/2 cup) or olive oil
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and place a baking pan with butter inside to melt while the oven heats.
  2. Wash and cut the red potatoes in half, scoring each half for even cooking.
  3. In a bowl, mix grated Parmesan, 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter is melted, sprinkle the seasoning mixture into the pan and place potato halves cut-side down on top.
  5. Spray tops of potatoes with nonstick cooking spray and add remaining herb seasoning.
  6. Bake uncovered for about 40 minutes until tender and golden.
