  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the filling by cooking blackberries with water, lemon juice, and sugar in a saucepan over medium heat for about 20-30 minutes until thickened. Smash gently and cool.
  2. Thaw puff pastry sheets for about 20-25 minutes. Roll each sheet into a rectangle on a floured surface.
  3. Spread half of the cooled goat cheese and blackberry filling over one sheet, then cut into 12 strips.
  4. Twist each strip gently and place on a baking sheet. Brush with an egg wash and sprinkle with lemon-thyme sugar.
  5. Preheat the oven to 400°F (200°C) and bake twists for about 16-18 minutes until golden brown.
