Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh or canned)
  • For the Streusel Topping: ½ cup all-purpose flour, ⅓ cup brown sugar, packed, ½ teaspoon ground cinnamon, ¼ cup cold unsalted butter, cut into small cubes
  • For the Glaze (Optional): ½ cup powdered sugar, 1–2 tablespoons milk, ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch square baking pan.
  2. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a bowl. Add cold butter cubes and blend until crumbly.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together softened butter with granulated sugar and brown sugar until light and fluffy.
  5. Beat in eggs one at a time, then add vanilla extract and sour cream.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Fold in diced peaches gently to avoid breaking them.
  8. Spread the batter evenly into the prepared pan and sprinkle the streusel topping on top.
  9. Bake for about 40-50 minutes or until a toothpick comes out clean from the center.
  10. Allow cooling before slicing; optional glaze can be added by whisking powdered sugar with milk.
