  • 3/4 cup light brown sugar, packed
  • 2/3 cup granulated sugar
  • 2/3 cup creamy peanut butter, room temperature
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1.5 cups chopped chocolate (semi-sweet or dark)
  • 1 cup mini pretzel twists, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the creamy peanut butter until well combined. Add the egg and vanilla extract; mix until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients while mixing on low speed until just combined.
  5. Gently fold in the chopped chocolate and pretzel pieces with a spatula.
  6. Scoop dough onto prepared baking sheets with about two inches apart between each scoop.
  7. Chill the dough for at least two hours before baking.
  8. Bake for about 11-12 minutes or until edges are set but centers are slightly puffy. Allow to cool on baking sheets for around ten minutes before transferring them to wire racks.
