  • 1 cup packed light brown sugar
  • 1/2 cup softened butter
  • 1/2 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10 slices turkey bacon, cooked and crumbled
  • 1/2 cup chopped peanuts
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8 x 8-inch baking dish with cooking spray.
  2. In a large bowl, cream together brown sugar and softened butter until smooth. Mix in peanut butter, egg, and vanilla extract until well combined.
  3. Gradually add flour, baking soda, and salt; mix until just combined.
  4. Fold in half of the crumbled turkey bacon and one-third of the chopped peanuts into the batter gently.
  5. Spread the mixture evenly in the prepared baking dish and bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
  6. Remove from oven and sprinkle chocolate chips on top; return to the oven for an additional minute to melt the chocolate. Spread melted chocolate over the bars and top with remaining turkey bacon and peanuts.
  7. Allow bars to cool completely before cutting into squares.
