  • 1 c. packed brown sugar
  • 3 large eggs
  • 1/4 c. sour cream
  • 2 tbsp. all-purpose flour
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 1 sleeve graham crackers, finely crushed
  • 5 tbsp. butter, melted
  • 1/4 c. packed brown sugar
  • Pinch of kosher salt
  • 4 tbsp. butter
  • 1/2 c. packed brown sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 c. heavy cream
  • 1 3/4 c. whole or chopped pecans

Instructions

  1. Preheat your oven to 325ºF and grease a springform pan.
  2. In a bowl, beat together softened cream cheese and brown sugar until smooth. Add eggs one at a time, then mix in sour cream, flour, vanilla extract, and salt until well combined.
  3. For the crust, mix crushed graham crackers with melted butter, brown sugar, and salt; press into the bottom of the pan.
  4. Pour the filling over the crust and bake for about 1 hour and 30 minutes until slightly jiggly in the center.
  5. Allow cheesecake to cool gradually in the oven with the door ajar before refrigerating for at least five hours.
  6. Prepare pecan topping by melting butter and brown sugar; stir in cream, cinnamon, and pecans until coated.
  7. Serve chilled with pecan topping.
