  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans
  • Pinch of salt

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press firmly into the bottom of a 9×13-inch dish and chill for 10–15 minutes.
  2. In another bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla; mix well. Fold in whipped topping until combined.
  3. For the pecan filling, combine brown sugar, corn syrup, and butter in a saucepan over medium heat until bubbling. Remove from heat and whisk in beaten eggs gradually. Stir in chopped pecans, vanilla extract, and salt.
  4. Layer the cream cheese mixture over the crust, then pour the pecan filling on top. Spread evenly and refrigerate for at least four hours or overnight.
  5. Slice into bars using a warm knife before serving.
