  • 1.52 pounds chicken
  • 45 cloves garlic
  • 2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 cup jasmine rice
  • 2 cups chicken stock
  • 1 cup fresh cilantro
  • ½ cup mayonnaise
  • 2 whole jalapeños

Instructions

  1. Marinate the chicken: Combine garlic, lime juice, olive oil, cumin, salt, and pepper in a bowl. Add chicken and coat thoroughly. Let marinate for at least 1 hour in the fridge.
  2. Cook the chicken: Preheat grill to medium-high or oven to 450°F. Grill chicken for 5-7 minutes per side until cooked through or bake for about 30 minutes.
  3. Prepare rice: Sauté diced onion and minced garlic in oil until soft. Add rinsed jasmine rice and seasonings; stir briefly before adding chicken stock. Bring to boil, cover, and simmer for 15 minutes.
  4. Make green sauce: Blend cilantro, mayonnaise, sour cream, jalapeños, garlic, olive oil, lime juice, salt & pepper until smooth.
  5. Serve: Plate rice topped with grilled chicken and drizzle with green sauce.
