Ingredients

  • Boneless, skinless chicken breasts
  • Soy sauce (or tamari)
  • Honey
  • Garlic cloves, minced
  • Fresh ginger, grated
  • Fresh pineapple slices
  • Cauliflower rice
  • Olive oil
  • Green onions, chopped

Instructions

  1. 1. Marinate the chicken by mixing soy sauce, honey, minced garlic, and grated ginger in a bowl. Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
  2. 2. Preheat the grill to medium-high heat. Grill marinated chicken for 6–7 minutes per side until fully cooked. Grill fresh pineapple slices for 2–3 minutes per side.
  3. 3. In a skillet, heat olive oil over medium heat. Add cauliflower rice with salt and pepper; sauté for 5–7 minutes until tender.
