  • 1 tbsp olive oil
  • 400g (6) chicken or turkey sausages
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all-purpose flour
  • 1 litre/4 cups chicken or vegetable stock
  • 2 bay leaves
  • 100g/1/2 cup wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml/1 1/2 cups light cream
  • Salt to taste

Instructions

  1. Heat olive oil in a soup pot over medium heat. Remove sausage from casings and cook until browned, breaking it up as it cooks. Transfer to a plate.
  2. In the same pot, sauté chopped onion, celery, and carrots on low heat for 10 minutes. Stir in minced garlic and thyme.
  3. Sprinkle in flour and stir until combined into a paste. Gradually add chicken stock while stirring until smooth.
  4. Add bay leaves and wild rice; bring to a simmer. After 30 minutes, add cubed potatoes and cook until tender.
  5. Pour in cream and season with salt before serving hot.
