  • 4 medium russet potatoes
  • 3 tbsp olive oil
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup turkey bacon bits or tempeh bacon
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then cut them in half lengthwise. Scoop out some of the flesh from each half.
  3. Drizzle olive oil over the potato skins and season generously with salt and pepper.
  4. Place cut-side down on a parchment-lined baking sheet and bake for about 25 minutes until golden brown.
  5. Flip the skins, add cheese and bacon bits, then return them to the oven for another 10-15 minutes until the cheese is melted.
  6. Let cool slightly before topping with sour cream and green onions.
