  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/2 cups pumpkin puree
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 3/4 cup heavy cream
  • 8 ounces cream cheese
  • 1 teaspoon vanilla
  • 1/4 cup milk
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, pumpkin puree, eggs, and milk until combined.
  3. In another bowl, mix flour, baking soda, cinnamon, cloves, and salt; add to the wet ingredients and stir gently until just mixed.
  4. Fill muffin tins three-quarters full and top with cinnamon-sugar mixture.
  5. Bake for 20-24 minutes or until a toothpick comes out clean.
  6. For the filling, whip heavy cream until stiff peaks form; beat cream cheese until smooth and fold in whipped cream with maple syrup.
  7. Once muffins cool completely, cut out a small cone from each muffin's center and fill with maple cream cheese mixture.
