  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch casserole dish.
  2. In a mixing bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, combine pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Gradually mix wet ingredients into dry ingredients until just combined and transfer to the greased dish.
  5. In a small bowl, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
  6. Carefully pour hot water over the topping layer without mixing.
  7. Bake for about 40 minutes or until the center is set.
  8. Allow to cool slightly before serving warm.
