  • 1 pint chopped tomatoes
  • 3 medium peaches, diced
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • Fresh basil leaves, sliced or chopped
  • 1 cup ricotta cheese
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C). Spread unsalted butter on each slice of baguette and sprinkle with minced garlic, salt, and pepper. Arrange on a baking sheet and toast in the oven until golden brown (10-12 minutes).
  2. In a large bowl, combine chopped tomatoes and diced peaches. Drizzle with olive oil and lemon juice; toss in fresh basil.
  3. In another bowl, whisk ricotta cheese until creamy. Season with a pinch of salt if desired.
  4. Once the bread is toasted, spread whipped ricotta on each slice and top with the peach-tomato mixture. Drizzle balsamic glaze over everything before serving.
