1 baguette, sliced thinly
1/4 cup unsalted butter
4 garlic cloves, minced
1 pint chopped tomatoes
3 medium peaches, diced
2 tablespoons extra virgin olive oil
Juice of 1/2 lemon
Fresh basil leaves, sliced or chopped
1 cup ricotta cheese
Balsamic glaze for drizzling
Instructions
Preheat the oven to 375°F (190°C). Spread unsalted butter on each slice of baguette and sprinkle with minced garlic, salt, and pepper. Arrange on a baking sheet and toast in the oven until golden brown (10-12 minutes).
In a large bowl, combine chopped tomatoes and diced peaches. Drizzle with olive oil and lemon juice; toss in fresh basil.
