  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1 can great northern beans, rinsed and drained
  • 1 can garbanzo beans (chickpeas), rinsed and drained
  • 3 bell peppers (red, yellow, orange), diced
  • 1/2 red onion, diced
  • Fresh cilantro, chopped
  • Fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey (or maple syrup for vegan option)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine all rinsed and drained beans.
  2. Add diced bell peppers and red onion.
  3. Stir in chopped cilantro and parsley.
  4. In a separate bowl, whisk together olive oil, apple cider vinegar, lime juice, Dijon mustard, honey (or maple syrup), chili powder, cumin, garlic powder, salt, and pepper.
  5. Pour dressing over the bean mixture; toss gently until coated.
