  • 12 Cup Tomato Sauce
  • 2 Garlic, cloves, minced
  • 34 Thyme, sprigs
  • 2 tbsp Olive Oil
  • 1 Eggplant, thinly sliced
  • 1 Yellow Squash, thinly sliced
  • 1 Zucchini, thinly sliced
  • 1 Red Bell Pepper, thinly sliced
  • 23 Potatoes, medium size, thinly sliced
  • Salt and Black Pepper to taste
  • Oil Spray (for greasing)
  • 1 tbsp Unsalted Butter
  • 1 tbsp All-Purpose Flour
  • 1 Cup Milk, 2% or whole milk
  • 1/8 tsp Nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C). Slice potatoes and boil them for 3-4 minutes until slightly tender. Drain and set aside.
  2. In a saucepan, melt butter and whisk in flour. Gradually add warm milk while stirring continuously until thickened. Season with salt, nutmeg, and black pepper.
  3. Spray a baking dish with oil, layer the base with tomato sauce, then pour the béchamel on top. Arrange sliced veggies artfully on top.
  4. Cover with parchment paper and bake for 55-60 minutes until veggies are tender.
