  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil (for roasting)
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice
  • 2 teaspoons maple syrup
  • 2 teaspoons mustard
  • Salt and black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. Trim the stems of the halved Brussels sprouts and remove any brown leaves. Rinse and pat dry.
  3. Toss the Brussels sprouts with ½ tablespoon of olive oil, salt, and black pepper until evenly coated. Spread in a single layer on the baking sheet.
  4. Roast for 20-25 minutes until slightly charred and tender.
  5. While roasting, mix 2 tablespoons of olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper in a jar or bowl until well combined.
  6. Once done roasting, drizzle the dressing over the Brussels sprouts before serving.
