  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. On a lined baking sheet, spread the halved cherries and sprinkle lightly with sugar. Roast for about 10 minutes until softened. Let cool.
  2. Lower the oven temperature to 325°F and prepare an 8×8 inch baking pan with non-stick spray and parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In another bowl, whisk together granulated sugar, eggs, melted butter, vegetable oil, and vanilla until fluffy.
  5. Fold the dry ingredients into the wet mixture gently until combined. Add half of the roasted cherries and chocolate chips before folding again.
  6. Pour the batter into the prepared pan and bake for 40-50 minutes until edges are set but center is slightly underdone.
  7. Cool completely in the pan before cutting into squares.
