  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head of garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for about 30 minutes.
  2. Grease a 9×13-inch baking dish with butter.
  3. Peel and thinly slice the potatoes; arrange them upright in the dish.
  4. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan, thyme, nutmeg, salt, and pepper until warm.
  5. Squeeze roasted garlic cloves into a bowl, mash into a paste, and stir into the cream mixture.
  6. Pour the creamy mixture over the potatoes ensuring they are coated evenly.
  7. Cover with foil and bake for about 40 minutes.
  8. Remove foil, sprinkle remaining cheeses on top, and bake uncovered for another 30 minutes until golden brown.
  9. Let cool for a few minutes before serving; garnish with fresh chives.
