  • 89 medium starchy potatoes
  • 1 head of garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the top off the garlic head, wrap it in foil with olive oil and salt, then roast for about 30 minutes.
  3. Grease a 9×13-inch baking dish.
  4. Peel and thinly slice the potatoes.
  5. Arrange potato slices upright in layers within the baking dish.
  6. In a saucepan over medium heat, combine cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until well mixed but do not boil.
  7. Squeeze roasted garlic into a bowl and mash; stir into the cream mixture.
  8. Pour mixture over layered potatoes and cover tightly with foil.
  9. Bake covered for about 40 minutes until tender.
  10. Uncover and sprinkle remaining cheese on top; bake for an additional 30 minutes until bubbly and golden brown.
  11. Let cool slightly before serving; garnish with fresh chives.
