  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper to create the marinade.
  2. Place the chicken in a large dish or bag; pour the marinade over it. Ensure it's well-coated. Marinate for at least 30 minutes (or overnight for deeper flavor).
  3. Preheat your oven to 375°F (190°C). Arrange quartered onions in a roasting pan; place the marinated chicken on top.
  4. Pour chicken broth around the chicken and roast for about 1 hour and 15 minutes until it reaches an internal temperature of 165°F (75°C).
