  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • ½ cup roasted red peppers, chopped
  • 2 tablespoons fresh basil, chopped
  • ½ cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix mozzarella cheese, roasted red peppers, fresh basil, and optional red pepper flakes.
  3. Cut a pocket into each chicken breast and season them inside and out with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  4. Stuff each chicken breast with the cheese mixture and secure openings with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat and sear each stuffed chicken for 2-3 minutes per side until golden brown.
  6. Add minced garlic to the skillet and cook briefly before deglazing with chicken broth and balsamic vinegar.
  7. Transfer the skillet to the oven and bake for 18-22 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let rest for 5 minutes before serving.
