  • 1 head of garlic
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse cherry tomatoes and place in a mixing bowl. Cut off the top of the garlic head, drizzle with olive oil, sprinkle with salt, and roast alongside the tomatoes.
  3. Drizzle tomatoes with olive oil, add salt, pepper, and optional red pepper flakes; toss to combine.
  4. Spread tomatoes on a baking sheet along with the garlic. Roast for 25-30 minutes until blistered.
  5. Cook pasta according to package instructions until al dente; reserve some cooking water before draining.
  6. Squeeze roasted garlic cloves into a mixing bowl, mash with roasted tomatoes.
  7. Stir in drained pasta, using reserved water as needed for sauce consistency.
  8. Add fresh basil just before serving.
