  • 2 cups cauliflower florets
  • 2 cups cubed butternut squash
  • 1 pound pizza dough
  • 5 ounces baby kale or spinach
  • 2 cups shredded Asiago cheese
  • 2 teaspoons minced fresh rosemary
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • nonstick cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower and butternut squash with olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Roll out the pizza dough on a floured surface.
  4. Spread minced garlic over the dough; layer with greens followed by half of the roasted vegetables.
  5. Top with half of the cheese; add remaining cheese on top.
  6. Drizzle with olive oil and bake for 15-20 minutes until golden brown.
  7. Let cool slightly before slicing into eight pieces.
