  • 2 tsp cornstarch
  • 2 tsp water
  • 3 cups cinnamon graham cracker crumbs
  • 1/2 cup + 3 tbsp salted butter, melted
  • 32 ounces cream cheese, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 and 1/2 tsp cornstarch
  • 3/4 cup full-fat sour cream, at room temperature
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup cold salted butter, cubed
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp salted butter, cubed (for caramel)
  • 1/2 cup + 1 tbsp heavy cream (for caramel)
  • pinch of flaky sea salt

Instructions

  1. Prepare the apple filling by cooking sliced apples with butter, brown sugar, and spices until tender.
  2. Make the crust by mixing graham cracker crumbs and melted butter, then press into a springform pan and bake.
  3. For the cheesecake filling, beat cream cheese, sugar, and eggs until smooth; add vanilla and spices.
  4. Layer half the cheesecake batter over the crust, add apple filling, then top with remaining batter.
  5. Bake in a water bath for about 90-110 minutes until set but slightly wobbly in the center.
  6. Cool gradually in the oven before chilling for at least six hours.
