  • 1 cup salted butter (softened)
  • 1 cup granulated sugar
  • 3 cups all-purpose flour
  • 4 large apples (peeled and diced)
  • 1/2 cup brown sugar
  • 1 cup granulated sugar (for caramel sauce)
  • 1/2 cup + 1 tbsp heavy cream
  • Flaky sea salt

Instructions

  1. Preheat oven to 365°F (185°C). In a large bowl, cream softened butter with sugars until combined. Add eggs and vanilla, mixing well.
  2. Gradually incorporate flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves until just mixed. Chill dough for 30 minutes.
  3. Meanwhile, cook diced apples in a pan with butter, lemon juice (if not using cider), brown sugar, cinnamon, nutmeg, and cloves until tender.
  4. Prepare the salted caramel sauce by melting sugar over medium heat until golden brown. Slowly stir in butter and cream until smooth; let cool.
  5. Scoop chilled dough into balls and place on lined baking sheets; bake for 10-12 minutes or until edges are set.
  6. Once cooled slightly, fill cookies with apple filling and drizzle with salted caramel.
