  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes
  • Fresh basil for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a pot over medium heat. Brown meatballs in batches for about 5 minutes until golden on all sides.
  4. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  5. Pour in chicken broth and bring to a gentle boil before reducing to simmer.
  6. Add the browned meatballs back into the pot and simmer for about 15 minutes.
  7. Stir in heavy cream and fresh spinach until wilted (approximately 2 minutes).
  8. Serve hot, garnished with fresh basil.
