  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon fresh sage (or ½ teaspoon dried sage)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, toss with olive oil, salt, and pepper. Roast on a baking sheet for about 25-30 minutes until tender.
  2. Cook your chosen pasta in salted boiling water according to package instructions until al dente. Reserve about a cup of pasta water before draining.
