  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 1/4 cup dry white grape juice (optional)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, grated
  • 1/2 cup Gruyère cheese, grated
  • 1 teaspoon Dijon mustard (optional)
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté the onion until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates.
  4. Season with thyme, salt, pepper, and optional grape juice; cook until absorbed.
  5. Mix in cream cheese and Parmesan until creamy; remove from heat before adding Gruyère.
  6. Incorporate one beaten egg into the filling.
  7. Roll out puff pastry on a floured surface; cut diagonal strips along the sides.
  8. Fill the center with mushroom mixture and braid the strips over it.
  9. Transfer to the baking tray, brush with remaining egg, and bake for 20–22 minutes or until golden brown.
  10. Cool slightly before slicing; garnish with parsley.
