Ingredients

  • 400 g ground lamb (or beef)
  • 250 g all-purpose flour
  • 100 g butter (or lard)
  • 100 ml boiling water
  • 1 tsp salt
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. Make the Pastry: Heat butter with boiling water until bubbling. Pour over flour and half the salt. Stir gently and knead until smooth.
  2. Prepare the Filling: Combine ground meat with onion, spices, and remaining salt in a bowl.
  3. Shape the Pies: Roll out pastry and cut circles for bases and tops. Line muffin tins with larger circles.
  4. Fill and Seal: Add filling to pastry cases, moisten edges, place tops on, and seal well.
  5. Bake: Brush with beaten egg and bake in a preheated oven at 180°C (350°F) for 30-35 minutes until golden brown.
  6. Cool Before Serving: Let cool briefly before removing from molds.
