  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice
  • 2 cups cooked white or brown rice or quinoa
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Pickled ginger
  • Nori strips (seaweed)
  • Chopped peanuts or cashews
  • Extra sriracha or soy sauce for drizzling

Instructions

  1. Marinate the shrimp by combining soy sauce, olive oil, honey, garlic powder, smoked paprika, black pepper, and optional red pepper flakes. Let sit for 10 minutes.
  2. Prepare the spicy mayo by mixing mayonnaise (or Greek yogurt), sriracha, lime juice, and soy sauce until smooth.
  3. Heat a skillet over medium-high heat and cook marinated shrimp for about 3-4 minutes on each side until pink and opaque.
  4. Assemble your bowls starting with the base of rice. Top with cooked shrimp and your favorite fresh vegetables.
  5. Drizzle with spicy mayo and serve immediately.
