  • 3 boneless skinless chicken breasts
  • 12 ounces mushrooms
  • ½ cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 2 large shallots
  • ½ cup dry white grape juice
  • 1 ½ cups low-sodium chicken broth
  • ½ cup heavy cream
  • Fresh thyme sprigs

Instructions

  1. Pat chicken breasts dry and cut each in half horizontally.
  2. In a shallow bowl, mix flour, salt, pepper, and garlic powder. Dredge chicken cutlets in the mixture.
  3. In a large skillet, heat 2 tablespoons of butter and olive oil over medium heat. Brown the chicken for about 5 minutes per side until golden. Set aside.
  4. Add remaining butter to the skillet; sauté sliced mushrooms until browned.
  5. Add shallots and garlic; cook until softened. Pour in apple vinegar, scraping any bits from the skillet.
  6. Stir in thyme sprigs, chicken broth, mustard, and cream. Let boil for five minutes before adding dissolved cornstarch to thicken.
  7. Return chicken to the skillet; simmer for another five minutes until heated through.
