  • 1 medium yellow onion, diced
  • 4 medium carrots, sliced
  • 4 stalks celery, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 large boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 ounces egg noodles
  • Juice of 1/2 lemon
  • Fresh parsley, chopped
  • Dried thyme
  • Dried rosemary

Instructions

  1. Prep: Dice onion, slice carrots and celery, and mince garlic.
  2. Combine: In a slow cooker, add all veggies, chicken broth, chicken breasts, bay leaves, thyme, rosemary, salt, and pepper.
  3. Cook: Cover and set on low for 6-8 hours until the chicken is cooked through.
  4. Shred: Remove chicken, shred it with two forks, then return it to the pot.
  5. Add Noodles: Stir in egg noodles and cook for another 10 minutes until tender.
  6. Finish: Add lemon juice and parsley just before serving.
