  • 34 boneless, skinless chicken breasts (cooked and shredded)
  • 1 cup full-fat sour cream
  • 8 large flour tortillas
  • 1.5 cups shredded cheese (Monterey Jack and cheddar blend)
  • 1 can (10 oz) green enchilada sauce
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Shred the cooked chicken.
  2. In a bowl, mix the shredded chicken with half of the sour cream and half of the cheese until well combined.
  3. Spoon about 1/4 cup of the chicken mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour green enchilada sauce over rolled tortillas, then spread remaining sour cream on top and sprinkle with remaining cheese.
  5. Bake for 20 minutes or until bubbly and golden brown. Garnish with chopped cilantro before serving.
