  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Peel and cube sweet potatoes. Boil in water for 15-20 minutes until fork-tender, then drain.
  2. In a large bowl, mix cooked sweet potatoes with olive oil, almond milk, vanilla extract, brown sugar, cinnamon, nutmeg, and allspice until smooth.
  3. Pour the mixture into a greased baking dish and sprinkle soaked raisins on top.
  4. In a separate bowl, combine vegan marshmallows, chopped pecans, and maple syrup; layer on top of the sweet potato mixture.
  5. Bake at 350°F (175°C) for about 90 minutes until golden brown.
