  • 4 large organic sweet potatoes
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Peel and cube sweet potatoes; boil until tender (15-20 minutes). Drain well.
  2. In a bowl, mash sweet potatoes and mix in olive oil, almond milk, vanilla extract, butter, brown sugar, maple syrup, cinnamon, nutmeg, allspice, and raisins until smooth.
