  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1 8 oz package reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, brown sugar, canola oil, honey, and vanilla extract until well combined.
  3. Fold in the grated carrots, zucchini, and chopped walnuts.
  4. In another bowl, mix the flour, baking powder, ground ginger, and baking soda. Gradually add this mixture to the wet ingredients until just combined.
  5. Pour the batter into a greased 9×13 inch baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating together reduced-fat cream cheese, icing sugar, and lemon zest until smooth.
  7. Once cooled completely, frost the bars generously before cutting into squares and serving.
