  • 4 salmon fillets
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sriracha
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 avocado, sliced
  • 1 cup cucumber, sliced
  • 1 cup shredded carrots
  • 1/4 cup chopped green onions
  • Lime wedges, for serving
  • Sesame seeds, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, mix together soy sauce, sriracha, honey, sesame oil, garlic powder, and black pepper. Marinade salmon for at least 15 minutes.
  2. Combine jasmine rice, coconut milk, water, and salt in a saucepan over medium heat. Bring to a boil, then reduce to low heat and cover until rice is tender (15-20 minutes).
  3. Heat a skillet over medium-high heat and cook marinated salmon skin-side down for 4-5 minutes per side until flaky.
  4. Assemble bowls with coconut rice as the base topped with salmon, avocado slices, cucumber, and a squeeze of lime.
