  • 1/4 cup red bell pepper, thinly sliced

  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon chili flakes

Instructions

  1. Cook rice noodles according to package instructions until tender; drain and rinse under cold water.
  2. In a large bowl, combine shredded lettuce, carrots, cucumber, herbs, peanuts, bell pepper, and green onions; toss gently.
  3. In a separate bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, lime juice, sesame oil, sugar, garlic, ginger, and chili flakes until smooth.
  4. Pour the dressing over the salad ingredients and toss to coat evenly. Add cooled rice noodles and mix again.
  5. Serve immediately or chill for 15 minutes for enhanced flavor.
