  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a small bowl, combine olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Rub this mixture evenly over the steak and let it marinate for at least 30 minutes.
