  • 450g flank or sirloin steak
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1½ cups whole milk
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Season the steak with olive oil, paprika, cumin, garlic powder, salt, and pepper. Sear in a hot skillet for 4–5 minutes on each side. Allow to rest before slicing.
  2. Rinse the rice under cold water; then toast it in olive oil with garlic powder. Add broth and simmer until tender (18–20 minutes).
  3. In the same skillet, melt butter and cook garlic until fragrant. Gradually stir in milk and cheeses until smooth; season with cumin, chili powder, salt, and pepper.
  4. Serve fluffy rice topped with sliced steak and warm queso sauce. Garnish with cilantro, lime wedges, and avocado.
