  • 6 tablespoons melted butter
  • 1 small box (3.3 oz) strawberry vegan gelatin
  • 1 cup boiling water
  • 16 oz softened cream cheese
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafer cookies

Instructions

  1. Prepare the crust by processing vanilla cream cookies into fine crumbs, mixing with melted butter, and pressing into a greased springform pan. Freeze for 15 minutes.
  2. Combine boiling water with strawberry vegan gelatin until dissolved; let cool. In another bowl, beat softened cream cheese and sugar until smooth.
  3. Whip heavy whipping cream with powdered sugar until stiff peaks form. Mix half with cream cheese mixture and half with cooled gelatin mixture.
  4. Layer half of the strawberry mixture over the crust, freeze for another 15 minutes, then add cream cheese mixture followed by the remaining strawberry mixture.
  5. Crush remaining cookies and sprinkle over layers before refrigerating for at least 4 hours.
