  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream, for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and pierce them several times with a fork. Bake directly on the oven rack for about 45–50 minutes until fork-tender.
  2. In a skillet over medium heat, add olive oil and sauté diced onion for 3–4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  3. Add ground turkey to the skillet, browning it completely while stirring in spices: smoked paprika, chili powder, ground cumin, sea salt, and black pepper.
  4. Stir in black beans, corn, and diced tomatoes; let simmer for 5–7 minutes to meld flavors.
  5. Once sweet potatoes are done baking, slice each open lengthwise and gently mash the flesh. Fill each potato half with the turkey mixture and top with shredded cheese.
  6. Return stuffed potatoes to the oven for another 5 minutes until cheese is melted. Garnish with fresh cilantro before serving.
