  • 1 pound bread (white, ciabatta, Italian, or baguette)
  • 1 cup butter (2 sticks)
  • 1 large onion (3.5 cups chopped)
  • 2 cups celery (1/4 inch diced)
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh sage (chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 cups chicken/turkey broth
  • 2 large eggs

Instructions

  1. Preheat the oven to 250°F. Tear or cut the bread into bite-sized pieces and spread on a pan. Bake for about an hour until toasted but not browned.
  2. While the bread is toasting, chop the onion and celery.
  3. In a skillet over medium heat, melt butter and sauté onions and celery for about 7-10 minutes until softened.
  4. Chop the herbs and set aside.
  5. In a large bowl, combine toasted bread, sautéed vegetables, herbs, salt, and pepper.
  6. In another bowl, whisk together broth and eggs. Gradually pour over bread mixture while gently combining until evenly moistened.
  7. Grease a baking dish with butter and transfer stuffing mixture into it. Cover with foil.
  8. Bake at 350°F for about 40 minutes covered; then remove foil and bake for an additional 25-35 minutes until crispy.
