  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a skillet over medium heat and cook sliced mushrooms for about 5–7 minutes until golden and moisture is released.
  2. Add butter, olive oil, and chopped shallots; sauté for another 5 minutes until shallots are softened.
  3. Stir in thyme and optional balsamic vinegar; season with salt and pepper.
  4. Butter one side of each slice of bread. On the unbuttered side, layer two slices of cheese, add mushroom mixture, and top with more cheese before placing another slice of bread on top (buttered side facing out).
  5. Cook in a skillet or panini press over medium heat for about 2–3 minutes per side until golden brown and crispy.
